A Vacation at Lake Oconee and Sunday Morning Coffee

I have been in Georgia all week on vacation. We arrived at Lake Oconee mid-week and are loving staying at the lake house! It’s glorious.

My family (well, except for Michael) flew into Atlanta last weekend and we have been staying at my brother Gary’s house. On Wednesday morning, we drove to their home at Lake Oconee and it’s been so relaxing.

As much as I love the beach, there is something so soothing about being at the lake.

It’s peaceful and the reflections on the lake are mesmerizing.

It’s been very hot and humid, although it has affected the golfers the most. My favorite thing to do is to go for a ride on the pontoon boat on the lake and just stare at all of the amazing houses. Oh my gosh! There are some very large and beautiful houses on this lake!

We had so much fun this past week. Bringing our two families together was just so much fun!

One of my favorite things to do at Lake Oconee is to hop on the boat and enjoy a cocktail with family and see all of the beautiful homes! They are all gorgeous!

Family time has been great!

We have twelve people here and we have enjoyed some amazing home-cooked family dinners. Thursday night was our night to cook and we served artichokes with mayo/lemon/garlic sauce, a champagne vinegarette/grilled peach/corn/arugula/feta cheese salad, baked potatoes, and bbq chicken. It was amazing.

My amazing daughter-in-law Charlotte made the salad and I am sharing the recipe below!

Grilled Peach and Arugula Salad

This Grilled Peach, Corn, Feta, and Arugula Salad with Champagne Vinaigrette is one of the best salads I have ever had, and my daughter-in-law Charlotte made it.

Yield: 6 servings

Grilled Peach and Corn Salad with Arugula, Feta and Champagne Viniagrette

Grilled Peach and Arugula Salad

This salad is so refreshing and the grilled pear and corn make it simply amazing!

Ingredients

  • 3 large ripe yellow peaches
  • 3 ears of fresh white corn
  • 6 ounces baby arugula
  • 2 tablespoons sliced almonds, roasted
  • 1/2 cup crumbled feta
  • For the Champagne Dressing
  • 4 tablespoons white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • Juice from 1/2 lemon
  • 1 tsp dijon mustard
  • Pinch of salt and pepper

Instructions

    Wash the peaches, cut them in half, and remove the seeds.

    Clean the corn.

    Heat a grilled pan on medium heat. Spray the peach with cooking oil and grill both sides for about 3 minutes.

    Grill the corn for about 10 minutes, turning frequently, and don't burn. When cool, cut the corn off the cob.

    In s salad bowl, add the arugula, corn, nuts, feta, and salt and pepper

    For the Champagne dressing. In a small bowl, stir together all of the ingredients and mix in with the salad.

    Serve the salad on small plates or a bowl, and top each serving with grilled pear.

    My Favorite Room This Week

    My favorite room this week has to be the primary bedroom in our Waco Airbnb home. We have had a lot of guests stay at our home this year. I am always amazed at home many bookings we get every month. In fact, in October, the house has only one night that is not booked! Isn’t that crazy?

    Although I love all of the three bedrooms in the Waco home, I always stay in this bedroom. When I was furnishing it I knew this would be “my room”. Most of the vintage pieces are from the Round Top flea market. Including the armoire and table in the bedroom and the mirrors in the bathroom!

    4. Well, you’re right down the road from me! We do love this area…I grew up in the next county, and remember when Lake Oconee was just being talked about! It’s a beautiful lake.
