Embracing Spring and Sunday Morning Coffee

|

Spring is officially here and I have been pretending it was already here for months. My goal this month is to spend more time outside.

It’s time for Sunday Morning Coffee and I cannot wait to share how I am embracing one of my favorite seasons. (To be honest, I love all the seasons but this one is nearer the top of the list!) This is a place to share, learn, explain, dream, and have fun. Join me!

About Me

After spending a week in Texas and enjoying being outdoors all day long I have decided that’s my new goal! Whether it is time to enjoy a good book, spend time with our dog Sport, or just ponder the day, it’s going to take place outside if possible.

Of course, living in Southern California makes this a lot easier, especially in March. We are blessed with warmer weather, less rain, and very few bugs in the spring.

Which reminds me. Oh my gosh! There are a lot of bugs in Texas! In Waco and Round Top the bugs were crazy. I know they were harmless, but they would fly into the windows every night trying to come inside.

It was crazy!

The garden is growing! It’s only been a month and my garden looks amazing!

This past week I harvested lettuce every night for dinner and it’s been so much fun. I have decided to plant a lot more arugula as it seems to be the most popular item in our garden.

So far the only issues I have are two tomato plants I think I need to replace. Considering I planted over 200 plants in my kitchen garden that’s not bad!

My Biggest Challenge This Week

Freshly baked pizza with toppings of mozzarella, tomato sauce, sausage, prosciutto, and arugula leaves on a wooden surface.

I have made a shift in my cooking style.

For years I have prided myself that I can cook a weeknight dinner in half an hour. Or less.

But that is changing.

I don’t want to cook quickly. Instead, I want to cook healthy and authentically.

When we were in Round Top Texas last week we dined at a restaurant and ate the best pizza. It was topped with San Marzano sauce, mozzarella, ricotta, Italian sausage, pepperoncini, and hot honey.

Hot honey?

It was delicious and I knew I wanted to make it for my family when I returned home.

Instead of buying pizza dough and pizza sauce, I made the sauce from scratch with San Marzano tomatoes. I also made gluten-free pizza dough with yeast.

I enjoyed the time I spent in the kitchen making this pizza, which did not disappoint. The hot honey was magical. If you haven’t tried it, you need to get some. I am sure it would taste good on anything.

I certainly didn’t make this pizza in twenty minutes. It took a few hours. But I enjoyed every minute.

I promise to share the recipes soon!

This week's to do list.
  • Fill in spaces in my kitchen garden and add more herbs and arugula.
  • Replant hanging pots and replant the side garden in the backyard.
  • Spend some time in Ventura with family and friends bike riding!
