What’s a Galette?

Although it’s entertaining to make, some people aren’t familiar with a galette. A galette is a rustic, free-form tart or pie originating in France. The word “galette” comes from the French word “galet,” which means pebble, referring to the flat, round shape of the pastry. Galettes can be made with various fillings, including fruits, vegetables, meats, cheeses, and even savory ingredients.

Traditionally, galettes were (and still are) made with a simple dough consisting of flour, butter, water, and sometimes sugar, which is rolled out into a circle and folded over the edges of the filling to create a rustic, uneven crust. The filling is then placed in the center of the dough, and the edges are folded up and over the filling, leaving the center exposed.

The origins of the galette can be traced back to the French countryside, where it was often prepared as a simple, rustic dish using whatever ingredients were readily available. It was commonly served as a peasant food or as a humble dessert for special occasions and celebrations.

Personally, I would love to live in the French countryside and make a galette every other day. How fun does that sound?

Galettes have become popular in France and many other parts of the world, where they are enjoyed for their simplicity, versatility, and delicious flavor. They are often served as desserts, particularly with sweet fillings such as berries, apples, or peaches. Still, they can also be enjoyed as a savory dish filled with ingredients like vegetables, cheese, and herbs.

Should I bake a savory galette next?

In recent years, galettes have experienced a resurgence in popularity, with many chefs and home cooks experimenting with different fillings, flavors, and variations. Whether sweet or savory, traditional or modern, the galette remains a beloved and timeless dish that celebrates the beauty of simple, rustic cooking.

Mother’s Day is a time to honor and appreciate the incredible mothers, grandmothers, and maternal figures in our lives. Whether you’re celebrating your mom, a mother figure, or even yourself, nothing says “I love you” quite like a homemade treat made with care and attention to detail.

This Strawberry, Raspberry, and Blueberry Galette epitomizes indulgence and elegance. It combines the freshness of three different types of berries – all nestled within a rustic, golden-brown pastry crust. It’s a dessert that’s as beautiful as it is delicious, making it the perfect centerpiece for a Mother’s Day brunch celebration.

Crafting the Perfect Galette

Let’s dive into creating this irresistible Strawberry, Raspberry, and Blueberry Galette.

Prepare the Dough

Begin by preparing the dough for the galette. Combine all-purpose flour, granulated sugar, and salt in a large bowl. Add chilled, cubed butter and a pastry cutter or fork to incorporate it into the flour mixture until it resembles coarse crumbs.

Gradually add cold water and lemon juice, mixing until the dough comes together. Shape it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow the flavors to meld and the dough to chill.

Roll out the chilled dough on a floured surface into a circle about 12 inches in diameter and 1/4 inch thick.

Transfer the rolled-out dough onto the prepared baking sheet. Spread the prepared cheesecake filling evenly over the center of the dough, leaving a 2-inch border around the edges. Arrange fresh strawberries, raspberries, and blueberries on top of the dough, creating a colorful and inviting display.

Carefully fold the edges of the dough over the filling, pleating as you go, to create a rustic galette shape. Press gently to seal any cracks or openings in the dough.

Brush the edges of the dough with beaten egg, then sprinkle turbinado sugar over the entire galette for a beautiful golden crust and added sweetness.

Place the assembled galette in the oven and bake for 30-35 minutes until the crust is golden brown and the filling is bubbling and set.

    1. I’m not seeing a reference to a cheesecake filling…? The galette here is basically the crust and berry mixture. Simple, rustic, pretty, delicious, but not a good contender for a cheesecake filling.
