My Latest Project

My Latest Project

Eight women stand together indoors, smiling at the camera. They are dressed in casual, colorful clothing. The setting appears to be a cozy, well-lit living space.

A Family Fajita Night Before the Wedding

A woman stands in a bright kitchen filled with food, wine, and ingredients on the counter, with large windows and a clock in the background.

The night before my nephew’s wedding, I hosted one of my favorite kinds of evenings with family gathered together around a table filled with good food, laughter, and a lot of love.

With my siblings and their families in town, it was the perfect chance to spend time together before the whirlwind of wedding festivities began. I wanted the night to feel festive but relaxed, so I decided to create a fancy fajitas buffet. It turned out to be the perfect choice.

The Menu

A woman with white hair stands in a kitchen in front of a counter with salad bowls, drinks, and food, wearing a floral shirt and white pants, smiling at the camera.

I had a great time planning a menu that felt hearty, colorful, and celebratory. The centerpiece was a build-your-own fajita bar with all the trimmings. On the grill, I cooked flank steak seasoned with a smoky marinade and chicken with a touch of citrus. Alongside the proteins, I charred plenty of onions and peppers until they were caramelized and slightly crisp on the edges.

For sides, I made my Corn and Jalapeño Dip, which disappeared faster than I could have imagined, along with a big bowl of Street Corn Salad featuring lime, cotija cheese, and cilantro. We had beans, shredded cheese, guacamole, salsa, and baskets of warm tortillas and chips so everyone could pile their plates high with their favorites. It was a spread that encouraged creativity and second helpings, and no one went home hungry!

Cocktails and Conversation

Stacks of chocolate chip cookies sprinkled with sea salt are cooling on a metal wire rack on a kitchen counter.

I also made my favorite chocolate chip cookies. They have the softest centers and are slightly crunchy around the outside. The secret?

Dropping the cookies onto the counter (about 4″ high) to flatten them, I promise to share the recipe soon!

Of course, no fajita night would be complete without margaritas. We squeezed plenty of fresh orange and lime juice and mixed up pitchers of homemade margaritas that were crisp, tangy, and just a little bit sweet. For fun, we also offered a mix of cocktails and spirits—something for everyone’s taste. Between the clinking glasses and bursts of laughter, the drinks certainly added to the festive mood.

The Best Part

Five adults stand together outdoors in front of greenery and flowers, dressed in business and semi-formal attire, smiling at the camera.

As delicious as the food and drinks were, they weren’t the highlight of the night. What I’ll remember most is sitting together outside, plates full, margaritas in hand, and just enjoying each other’s company.

There was an overwhelming sense of excitement in the air, with the wedding only a day away, but this evening gave us the chance to slow down, connect, and soak in the joy of being together.

The wedding was fabulous, and was held in my brother’s backyard. It was so much fun to see all of the cousins!

Hosting family is always special, but this dinner felt extra meaningful. It wasn’t just about fajitas, margaritas, or setting a pretty table. It was about creating space for us to be together, to laugh, talk, and celebrate a milestone in our family’s story.

Sometimes, the simplest gatherings, featuring grilled steak, warm tortillas, and plenty of love, turn out to be the most memorable. And this night was exactly that.

My Biggest Challenge This Week

organizing craft supplies

Pushing Through a Rough Week

A craft workspace with red felt poinsettia shapes, scissors, pens, and glasses on a table by a window, with a view of a small frosted Christmas tree and wreath outside—perfect for projects inspired by Amazon Prime holiday finds.

I can hardly believe I got sick on the way home from Portugal. After two long flights, each about six hours, I knew something wasn’t right. By the time we landed, I was down with the worst cold—sore throat, headache, body aches, the works. Travel is tiring enough, but being sick on a plane is even more exhausting. Brutal.

Even though I felt miserable, there was still so much on my plate. So, I set myself up with my laptop, tissues, and plenty of tea, and decided to push through. I spent hours writing blog posts, updating my Editorial Calendar, and even managed to finish a few new Christmas crafts for A Handmade Christmas. It wasn’t glamorous, but it felt good to keep moving forward and check things off my list.

By Wednesday, thankfully, I started feeling like myself again, just in time to switch gears into dinner party planning mode. For me, the best way to get through an illness is to stay productive, even if it means working at a slower pace. Somehow, it makes me feel less defeated.

What do you think? Are you a “rest and recover” person, or do you believe in powering through?

(And by the way, it wasn’t Covid, as I did lots of tests.)

This week's to do list.
  • Share Amazon Prime Big Deals Day finds on Tuesday and Wednesday.
  • Finish the next A Handmade Christmas craft.

This homemade Halloween Advent Calendar is the cutest project ever! It’s a bit late, but I would still do it if my kids were still living at home!
