breakfast for spring

Welcome to my Spring kitchen tour of our Waco Airbnb. I styled our kitchen for a spring breakfast and I am also sharing my favorite Blueberry Muffin recipe.

I spent a year remodeling our Waco home and the end result is just as I had hoped. It’s such a wonderful home, perfect for families or groups of girlfriends visiting Waco.

Who doesn’t love a breakfast buffet with freshly baked muffins? I know I do!

Waco Airbnb Before and After

In 2018, we purchased a small home in Waco, Texas. We bought the home to fix up and rent as an Airbnb.

The home was a disaster and needed a major renovation. It took almost a year, but when it was finally done, you would never know how its story began. You can see the renovation progress here and here.

Are you ready for some incredible before and after photos? You will want to sit down to scroll through these! Here is a picture of the kitchen from the day we saw the house for the first time.

To provide some perspective, the kitchen used to be in the middle of the left side of the house. And, the water heater was right in the middle of the kitchen.

I am not kidding …

We opened up the entire left side of the home and moved the kitchen to the back of the house. We also opened up the back of the house and added ten feet to make room for a bigger kitchen.

This is what it looked like after we added the ten feet.

You can see the new wood which is where we added to the back of the house. We found matching vintage boards to match the existing ceiling and floorboards so you can hardly tell where the old and new line blends together.

I added lots of windows to make sure the kitchen would be nice and bright.

I could tell early on in the construction that the kitchen was going to turn out even better than I had hoped.

We added shiplap, the matching floor and ceiling boards, and cabinets from Semi Handmade. They make beautiful cabinet fronts for IKEA bases. Click on this blog post to learn all about my SemitHandmade cabinets.

The vintage island I found at Round Top is truly one of my favorite Round Top finds, ever. When I purchased it, it had a thin wooden top, see the photo above. I simply replaced the old wooden top with a new piece of butcher block and it created the perfect island for the space.

I love the kitchen in our home so much. It’s light and open and the perfect place to cook and entertain.

The New Waco Airbnb Kitchen

Now that the house is done, one of my favorite things is adding decor to our Waco home. Because the kitchen is open, I set the island for a spring breakfast.

The plates that I found matched the colors in the kitchen perfectly. I find that salad plates are the perfect size to use for breakfast.

Breakfast in the Spring

I used woven cotton placemats that are so easy to pop into the laundry and they always look great after a wash. These come in some really amazing colors so if you are looking for placemats, take a look!

All of the drinking glasses in our Airbnb (and in our home in California) are Ball jars. I love these jars and I think they make the best drinking glasses.

As I mentioned, our island is a vintage counter that I found at the Round Top Antique fair. I replaced the thin worn wood top with an off-the-shelf butcher block counter that I found at the local hardware store. The island has two huge pull-out storage bins on the sink side that are great for storage! The counter stools are new, but look old, so they were perfect for the island.

The light green/blue/gray island was the inspiration for my simple decor. It seems that every time I look at our island it is a different color so I will continue to call it green/blue/gray. The plates are the perfect match for all three colors!

I found the Flower Market sign at Oh Sweet Sky. Sadly, they are no longer in business.

When you come to Waco, be sure to check out Magnolia Discount Shop on Bosque. This was Joanna’s original shop which now houses their marked-down/discounted items. I always find a few treasures whenever I shop there!

My Blueberry Muffin Recipe

One of my favorite breakfast treats to make is Blueberry Muffins. I have made this recipe since I was ten years old. It’s only four steps and really easy to make! You might want to make this with your kids. The best part is, of course, that they are so delicious.

Yield: 12 muffins

Blueberry Muffins Recipe

Blueberries are my favorite and I love to make these muffins.

The recipe is so simple (it's only four steps) and these muffins are delicious.

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 cup flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 tsp. salt
  • two large cartons of fresh blueberries

Instructions

    1. Preheat over to 400 and grease muffin tins.
    2. Using the two bowl method, mix the egg, milk, and oil in one bowl and the flour, sugar, baking powder, and salt in the other bowl.
    3. Combine both and add blueberries. Stir till lumpy.
    4. Bake 25 - 30 minutes when a wooden skewer comes out clean when inserted into the muffin.
This was a really fun spring kitchen tour. I am already getting excited about summer styling.

How to Build a warp Around Porch

I hope you enjoyed my spring kitchen tour.

I remodeled our home with the idea in mind that all of you just might stay there someday. We knew when we bought the home we would be renting it out to folks who want to visit Magnolia or Baylor.

Our home has three bedrooms (one primary suite with a king, and two bedrooms with two queen beds in each room) and two bathrooms. The home is on half an acre and has a beautiful wrap-around porch.
