My Favorite Strawberry Muffin Recipe
I love to make muffins and this strawberry muffin recipe is one of my favorites. It has a yummy crumble topping and is so good!
I’m not sure why, but it feels fancy to serve muffins for breakfast. These strawberry muffins are really easy and a favorite with family, friends, and guests. Looking for one of those tried and true, sure thing recipes? Keep reading!
Yum! Strawberries are fresh and plentiful so it makes sense I would be part of a blog hop featuring some really fabulous strawberry recipes! Today I am sharing my Strawberry Muffin Recipe and all of my boys will gladly state how good these muffins really are! It’s a good thing I was able to get some good photos before they started to disappear.

I love these muffin cups and I think I bought them about five years ago. They have been sitting in my “not so organized” paper goods drawer and I was so happy that I remembered to use them for this recipe. Aren’t they perfect?
In fact, don’t laugh, but I think these muffin cups make these muffins taste better. I mean it is all about the presentation, right?
Here are some of my favorites.
How to Make My Strawberry Muffins
I used two cups of strawberries. I prefer to chop them rather than crush them. Don’t these look wonderful?
The bigger pieces of strawberries stay more intact and don’t cause the batter to turn red. You can also substitute other fruits including bananas or any berries.
When you use paper muffin cups you don’t use muffin tins. Just put them on a cookie sheet. And they don’t burn when you cook them. I promise.
I filled each muffin cup 2/3 full. And just so you know, the batter is quite delicious. I felt obligated to taste it for you.
The last step is to add the crumble topping. This is the “icing on the cake” and really makes these muffins delicious.
These muffins bake at a higher temperature (400 degrees) than most. This batch cooked for twenty-five minutes. Because ovens do vary so be sure to start checking your muffins after 15 minutes. When a test stick comes out clean, the muffins are done.

Strawberry Crumble Muffin Recipe
These are the best strawberry muffins ever! They are really moist and tender.
Ingredients
- Strawberry Muffins
- • 3 cups flour
- • 1/2 cup brown sugar
- • 1/2 cup sugar
- • 2 tsp baking soda
- • 1/4 tsp baking powder
- • 1/2 tsp salt
- • ½ cup cream of coconut
- • 1/2 cup buttermilk
- • 1/3 cup vegetable oil
- • 2 eggs
- • ½ cup unsweetened yogurt
- • 2 tsp vanilla extract
- • 2 cups strawberries, chopped
- Crumb Topping
- • 6 Tbsp butter, melted
- • 1/2 cup brown sugar
- • 3/4 cup flour
Instructions
1. Preheat oven to 400 degrees and either grease a muffin tin or line with muffin cups. If using paper muffin cups, place them on a cookie sheet.
2. In a bowl, mix flour, brown sugar, sugar, baking soda, baking powder, and salt.
3. In a separate bowl, mix the cream of coconut, buttermilk, vegetable oil, and eggs. Mix until batter is just combined. Add to dry ingredients.
4. Add in yogurt and vanilla extract.
5. Add in strawberries, and mix.
6. Fill muffin cups about 2/3 of the way full with the strawberry muffin batter. Set aside.
7. In a separate bowl, mix flour and brown sugar together. Add the melted butter and mix together until crumbs form.
8. Sprinkle crumbs ion top of each muffin.
- 9. Bake for 20 - 25 minutes, or until muffins are just golden brown and a toothpick comes out clean.
Notes
If you need a substitute for coconut cream you can use (per cup needed):
Combine 1 cup light cream with 1/4 teaspoon coconut extract OR - Use 1 cup cream (lacks coconut flavor)

Strawberry Gluten Free Muffin Recipe
I decided to modify my Strawberry Muffin Recipe and make it gluten-free and more healthy. These are delicious,
Ingredients
- Strawberry Muffins
- • 3 cups 1:1 gluten-free flour
- • 1 cup coconut sugar (or 1/2 cane sugar and 1/2 cup brown sugar)
- • 2 tsp baking soda
- • 1/4 tsp baking powder
- • 1/2 tsp salt
- • ½ cup cream of coconut
- • 1/2 cup almond milk
- • 1/3 cup coconut oil
- • 2 eggs (or plant JUST egg)
- • ½ cup dairy-free plain or vanilla yogurt
- • 2 tsp vanilla extract
- • 2 cups strawberries, chopped
- Crumb Topping
- • 6 Tbsp plant-based butter, melted
- • 1/2 cup coconut (or brown) sugar
- • 3/4 cup flour
Instructions

Can I use frozen strawberries
I haven’t tried it Heather. Frozen strawberries should work fine as they will not smush in the batter as you mix it. Let me know how they turn out!
