If there’s ever an excuse to fire up the grill (or the stovetop), it’s National Burger Day. Burgers are one of those classic comfort foods that can be reinvented in endless ways.

And I love giving them a seasonal twist. Since we’re heading into fall, I wanted to create burgers that are not only delicious but also inspired by the cozy, rich flavors this time of year brings.

Two Delicious Fall-Inspired Burger Recipes

From gooey Gruyère cheese to a maple-glazed bacon burger (with apples!), these recipes are the perfect way to celebrate National Burger Day in autumn style.

Caramelized Onion & Gruyère Burger

These burgers are so easy to make.

In a large skillet over medium-low heat, melt butter and add onions. Cook slowly, stirring often, for 25–30 minutes until deep golden and caramelized. Stir in thyme and set aside.

Shape the beef into four patties. Heat a griddle or cast-iron skillet over high heat. Place a beef ball on the pan, season with salt and pepper, and cook 4 minutes per side.

If you would like to make a smash burger, shape the beef into four balls, mash flat with a spatula, and cook 2 minutes on each side.

During the last minute of cooking, top each patty with Gruyère and let it melt.

Toast brioche buns, spread Dijon mustard on each half, and assemble burgers with caramelized onions on top.

Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • 1 lb ground beef (80/20)
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tsp fresh thyme leaves
  • 1 cup shredded Gruyère cheese
  • 4 brioche buns
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

I love the maple-flavored bacon and crisp apples in this burger. Trust me, these are amazing.

Preheat oven to 400°F. Place bacon on a foil-lined baking sheet. Brush with maple syrup, sprinkle with black pepper, and bake for 15–20 minutes until crispy.

Form ground beef into four patties and season with salt and pepper. Grill or pan-fry to desired doneness.

Add cheddar slices to patties during the last minute of cooking so they melt.

Spread mayonnaise on buns, layer patty, bacon, and thin apple slices.

  • 1 egg
  • 1/2 tsp poultry seasoning
  • 4 oz brie cheese, sliced
  • 1/4 cup cranberry sauce (homemade or canned)
  • 4 brioche buns
  • A handful of arugula or spinach

Instructions:

  1. In a mixing bowl, combine ground turkey, breadcrumbs, egg, poultry seasoning, salt, and pepper. Form into four patties.
  2. Grill or pan-fry over medium heat until fully cooked (165°F internal temp).
  3. During the last minute of cooking, add brie slices to melt.
  4. Toast buns, spread cranberry sauce on the bottom half, and top with patty and greens.
