- ¼ tsp black pepper
- Filling & Toppings:
- 1 cup of baby spinach, chopped
- ½ cup cooked and crumbled bacon or pancetta (optional but delicious)
- ½ cup shredded Gruyère or sharp cheddar
- 4 oz cream cheese, cut into small cubes
- 2 tbsp chopped chives or green onions
- ½ cup crispy fried onions (plus extra for garnish)
- Fresh thyme or parsley for garnish (optional)
Instructions
- Caramelize the Onions - Melt butter with olive oil over medium-low heat in a large skillet. Add sliced onions and a generous pinch of salt. Stir occasionally and cook slowly—about 25–30 minutes—until the onions are golden. Add balsamic vinegar in the last few minutes for extra depth if you like. I think the vinegar is an absolute!
- Preheat Oven - Preheat your oven to 375°F (190°C). Grease a 9-inch cast-iron skillet, pie dish, or oven-safe baking dish.
- Whisk the Eggs - Whisk the eggs, milk or cream, Dijon mustard, smoked paprika, salt, and pepper in a large bowl until well combined and slightly frothy.
- Assemble the Frittata - Add chopped spinach, caramelized onions, crumbled bacon, shredded cheese, and chopped chives to the egg mixture. Gently fold in the cream cheese cubes (you want to keep them intact so they melt into creamy pockets). Pour the mixture into the greased dish and spread evenly. Top with crispy fried onions.
- Bake - Bake for 30–35 minutes until the frittata is puffed and golden brown and the center is set. A knife inserted should come out clean. If the top is browning too quickly, loosely cover with foil.
- Garnish & Serve - Let it cool for 5–10 minutes before slicing. Top with more crispy fried onions and sprinkle with fresh thyme or parsley for a bright finish.
