A New Summer Cake
I made a new summer cake with edible paper pastry sheets, a great way to add intricate designs and personalized touches.
These sheets, known as wafer paper or frosting sheets, can be bought online in many different patterns. They can also be printed with food-grade ink and a special printer. When applied to cakes, they create stunning visual effects. This one is my new favorite!

Make and Decorate a Summer Cake with Edible Paper Pastry Sheets

Today, I am sharing how to make a white cake with coconut filling.

The cake is covered with an edible paper pastry sheet. The sheet is printed with edible ink (on edible paper) and is placed on a frosted cake.
It looks fantastic, tastes good, and is not hard to make.
Where to Find Edible Cake Pastry Sheets

I found two places on Etsy that sell these edible paper sheets (already printed) with great designs. Etsy has many options, but my favorites are the floral printed sheets and these sheets (like the one I used).

White Cake with Coconut Filling Recipe

Ingredients for the White Cake
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole milk
Ingredients for the Coconut Filling:
- 1 cup coconut milk
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1/2 cup shredded coconut
- 1 teaspoon vanilla extract
Instructions for the White Cake:
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. - Mix Dry Ingredients:
Whisk together the flour, baking powder, and salt in a medium bowl. Set aside. - Cream Butter and Sugar:
In a large bowl, beat the butter and sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes. - Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. - Combine Dry and Wet Ingredients:
Add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined. - Bake the Cake:
Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

- Combine Ingredients:
Whisk together the coconut milk, sugar, and cornstarch in a medium saucepan until smooth. - Cook the Mixture:
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble. - Add Coconut and Vanilla:
Remove the saucepan from heat and stir in the shredded coconut and vanilla extract. Allow the filling to cool completely before using.

Assembling the Cake:
- Prepare the Cake Layers:
Once the cake layers are completely cool, use a serrated knife to level the tops if necessary. - Add the Coconut Filling:
Place one cake layer on a serving plate or cake stand. Spread a generous amount of coconut filling over the top. Place the second cake layer on top. - Frost the Cake:
Frost the entire cake with your choice of frosting, such as buttercream or cream cheese , ensuring a smooth surface for the edible paper application.

Decorating with Edible Paper Pastry Sheets

I can’t imagine how difficult it would be to create this cake without using edible paper! It’s exciting that you can make such a beautiful cake without being a professional artist or decorator.
Materials Needed:
- Edible paper pastry sheets (wafer paper or frosting sheets)
- Edible ink printer (if you want to print custom designs but you need a custom printer)
- Scissors or craft knife
- Small brush and water or edible glue
Steps:
First, cut the edges around the pastry sheet. Measure the height of your cake (around the entire cake) and mark the edges of the edible paper pastry sheets. Peel off the backing to apply it to the frosted cake.

Place the paper on the cake and smooth out any air bubbles with your fingers.
Once the edible paper is applied, you can add additional decorations such as edible glitter, piping, or fondant accents to enhance the overall look of your cake.
