Peach and Basil Caprese Skewers

These Peach and Basil Caprese Skewers make a delightful and refreshing appetizer for your summer gatherings.

Prep Time 25 minutes
Total Time 25 minutes

Ingredients

  • 2 ripe peaches, cut into wedges
  • 1 cup cherry tomatoes
  • 8-10 fresh basil leaves
  • 8-10 small mozzarella balls (bocconcini)
  • Balsamic glaze, for drizzling

Instructions

  1. Thread a peach wedge, a cherry tomato, a basil leaf, and a mozzarella ball onto a skewer.
  2. Repeat the process until all the ingredients are used.
  3. Arrange the skewers on a serving platter.
  4. Drizzle the skewers with balsamic glaze just before serving.
Yield: 4 servings

Grilled Peach Salad with Arugula and Goat Cheese

Cook Time 15 minutes
Total Time 35 minutes

Ingredients

  • 4 ripe peaches
  • 6 cups fresh arugula
  • 4 ounces goat cheese, crumbled
  • 1/2 cup toasted pecans, roughly chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. If you don't have a grill, you can use a grill pan or even a stovetop skillet.
  2. Cut the peaches in half and remove the pits. Brush the cut sides of the peaches with a little olive oil to prevent sticking.
  3. Place the peaches on the grill, cut side down. Grill for about 2-3 minutes until you get grill marks and the peaches are slightly softened. Flip the peaches over and grill for another 1-2 minutes. Remove from the grill and let them cool slightly.
  4. Place 1/2 cup of pecans with 2 tablespoons of sugar in a skillet and stir over medium heat until the sugar is melted. Place on foil. When cooled, chop into smaller pieces
  5. In a large bowl, add the arugula, crumbled goat cheese, and toasted pecans. Toss gently to combine.
  6. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined. Adjust the seasoning to taste.
  7. Cut the grilled peaches into wedges and add them to the salad bowl.
  8. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  9. Serve the grilled peach salad immediately and enjoy!

Notes

Optional variations:

  • Add some thinly sliced red onions or shallots for an extra kick of flavor.
  • Substitute the goat cheese with feta cheese or blue cheese for a different taste.
  • For added freshness, you can add some mint or basil leaves to the salad.

Note: Grilling the peaches brings out their natural sweetness and adds a smoky flavor to the salad. Make sure the peaches are ripe but firm for the best results.

Balsamic Peach and Goat Cheese Stuffed Chicken

Cook Time 40 minutes
Total Time 1 hour 40 minutes

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 1/2 cup crumbled goat cheese or Brie cheese
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

1. Preheat your oven to 375°F.

2. In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, olive oil, dried thyme, salt, and pepper to create the marinade.

3. Butterfly the chicken breasts by slicing through the middle of each breast horizontally, but not all the way through, to create a pocket for stuffing.

4. Place the sliced peaches and crumbled goat cheese (or Brie cheese) inside the pocket of each chicken breast.

5. Secure the stuffed chicken breasts with toothpicks to keep the filling intact during cooking.

6. Place the stuffed chicken breasts in a shallow dish and pour the marinade over them, making sure they are evenly coated. Cover the dish and let it marinate in the refrigerator for at least 30 minutes, or preferably, up to 4 hours to allow the flavors to infuse.

7. Heat an oven-safe skillet over medium-high heat. Once the skillet is hot, add the marinated stuffed chicken breasts and sear them for about 2-3 minutes on each side until they develop a golden-brown crust.

8. Transfer the skillet to the preheated oven and bake for approximately 20-25 minutes, or until the chicken is fully cooked through (internal temperature of 165°F and the cheese is melted and bubbly.

9. Remove the skillet from the oven and let the stuffed chicken rest for a couple of minutes before serving.

10. Garnish the Balsamic Peach and Goat Cheese Stuffed Chicken with fresh basil leaves.

11. Serve the stuffed chicken with a drizzle of the remaining balsamic marinade and a side of roasted vegetables or a light salad for a complete and delicious meal.
