I haven’t been this excited about a new cooking tool in a long time. We installed a Coyote Pellet Grill at the Beach House and I am obsessed!

Pellet grills have gained popularity in recent years, thanks to their ease of use and versatility. Our new Coyote Pellet grill can be used for a variety of cooking methods, including grilling, smoking, roasting, and baking. It can cook a pizza at 700 degrees, sear steaks, smoke a turkey, grill anything, and even bake cookies!

When it came time to design the outdoor kitchen on our new third-floor ocean-view deck, I wanted the grill to be the focus. Our Coyote Pellet Grill is the perfect solution to bring the spirit of indoor cooking to the outdoors. It’s the centerpiece of all of our dinners on the deck!

Now when we grill, we spend the entire time on the deck, enjoying the view (with cocktails of course) and also cooking the entire dinner on our new Coroye Pellet grill.

I have to be honest. When I first started talking with Coyote Grill about adding a new grill to the beach house outdoor kitchen, I told them I wanted a gas grill.

I mean, we already had the gas line installed.

But then they started talking about pellet grills and all of the features they offered, and I started listening.

I have had a lot of fun experimenting with my Coyote Pellet Grill and I must say, the results have been incredible.

I created three new pellet grill recipes and made all three of them for my husband Dave and son Matt and we were all so happy that the results were fantastic. Their comments were centered on the fact that the smokey taste in the burger, chicken, and corn was not only unexpected but delicious.

I really felt as if I have opened up a whole new way of cooking by using my pellet grill. I love cooking on our new third-floor deck and the end result has so far always been a really great result.

The Best Pellet Grill Chicken Breasts

Here is a pellet grill recipe for chicken breasts on the pellet grill, featuring a savory marinade and flavorful seasoning.

The Best Pellet Grill Chicken Breasts

This marinated, rubbed, and smoked chicken cooked on the pellet grill is simply amazing,

Prep Time 20 minutes
Cook Time 25 minutes
Additional Time 4 hours
Total Time 4 hours 20 minutes

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Apple or cherry pellets

Instructions

  1. In a bowl, whisk together the olive oil, soy sauce, honey, dijon mustard, and minced garlic to create the marinade.
  2. Place the chicken breasts in a large zip-top bag and pour the marinade over them. Seal the bag and toss to coat the chicken evenly.
  3. Refrigerate the chicken for at least 2 hours, or up to 8 hours, to allow the flavors to meld.
  4. Preheat your pellet grill to 375°F and use pellets made from fruitwood, such as apple or cherry, which are a popular choice for cooking chicken. They impart a sweet, subtle flavor that complements the natural flavor of the chicken.
  5. In a small bowl, mix together the paprika, onion powder, dried thyme, dried rosemary, salt, and pepper to create the seasoning.
  6. Remove the chicken breasts from the marinade and discard any excess marinade. Season the chicken breasts on both sides with the seasoning mixture.
  7. Place the chicken breasts on the grill grates and close the lid. Cook for about 20-25 minutes, or until the internal temperature reaches 165°F.
  8. Remove the chicken from the grill and let it rest for about 5 minutes before slicing it.
  9. Serve the grilled chicken breasts with your favorite sides and enjoy the delicious, savory flavor!

Loaded Burgers Cooked on a Pellet Grill

Here’s a recipe for a delicious loaded cheeseburger cooked on a pellet grill.

These burgers not only have the flavorful taste from the seasoning mixture but the smoky hickory flavor adds to one of the best burgers you will ever eat.

Ingredients

  • 1 pound ground beef (80/20)
  • 4 brioche buns
  • 4 slices of cheddar cheese
  • 4 strips of bacon
  • 4 tablespoons of mayonnaise
  • 4 leaves of lettuce
  • 1 large tomato, sliced
  • 1/2 red onion, sliced
  • Salt and pepper, to taste
  • Hickory or mesquite pellets
  • For the seasoning:
  • 1 tablespoon smoked paprika
  • 1 tablespoon onion powder

Instructions

  1. Preheat your Coyote Pellet Grill to 400°F using hickory pellets. The hickory pellets will give your burgers a rich, smoky flavor that pairs perfectly with the other ingredients.
  2. In a small bowl, mix together the smoked paprika, onion powder, garlic powder, salt, and black pepper to create the seasoning mixture.
  3. Divide the ground beef into four equal portions and form each portion into a patty. Season each patty generously with the seasoning mixture.
  4. Place the burgers on the grill grates and close the lid. Cook for 4-5 minutes per side, or until the internal temperature reaches 160°F.
  5. While the burgers are cooking, cook the bacon in a skillet until it's crispy.
  6. When the burgers are done, remove them from the grill and top each one with a slice of cheddar cheese. Place the buns on the grill grates and toast them for 1-2 minutes, or until they're lightly browned.
  7. To assemble the burgers, spread a tablespoon of mayonnaise on each bun. Top the bottom half of the bun with a leaf of lettuce, a slice of tomato, and a few slices of red onion. Place the burger patty on top of the vegetables, followed by a strip of bacon. Finish with the top half of the bun.
  8. Serve your loaded cheeseburgers immediately and enjoy the delicious, smoky flavor!

Grilled Corn on the Cob on the Pellet Grill

Yield: 4 corn pieces

Grilled Corn on the Cob with Husks Recipe Using a Pellet Grill

The smoky flavor and butter and garlic paste create some of the tastiest corn on the cob.

Ingredients

  • 4 ears of corn, husks intact
  • Water, for soaking
  • 4 tablespoons unsalted butter, softened
  • 4 gloves of garlic, chopped
  • Salt and pepper, to taste
  • Optional toppings: grated Parmesan cheese, chili powder, or lime wedges

Instructions

  1. Preheat your pellet grill to medium-high heat, around 400°F (200°C).
  2. Fill a large bowl or sink with water and soak the corn in the husks for about 15-20 minutes. This will help keep the corn moist and prevent the husks from burning.
  3. While the corn is soaking, prepare the flavored butter by mixing the softened butter, garlic, salt, and pepper in a small bowl. You can also add any other desired seasonings or herbs to enhance the flavor.
  4. Remove the corn from the water and shake off any excess moisture. Gently peel back the outer husks, leaving them attached to the base of the corn cob. Remove and discard the silk strands, if any.
  5. Spread a generous amount of the seasoned butter evenly over each ear of corn, ensuring all sides are coated.
  6. Pull the husks back up over the corn, covering it completely. You can use kitchen twine or a strip of husk to secure the top if needed.
  7. Place the corn on the grill grates, ensuring they are spaced apart to allow for even cooking. Close the lid of the grill.
  8. Grill the corn for about 20-25 minutes, turning occasionally, until the husks are slightly charred and the kernels are tender.
  9. Once cooked, carefully remove the corn from the grill using tongs. Let it cool for a few minutes before serving, as it will be hot.
  10. To serve, peel back the husks and tie them together with kitchen twine or husk strips to create a handle. This will make it easier to hold and eat the corn.
  11. Optionally, you can sprinkle the grilled corn with grated Parmesan cheese, chili powder, or a squeeze of lime juice for added flavor.

One Regret

Before I wrap up, I do want to share I have one regret.

I had planned to make cookies in my pellet grill for dessert! How incredible would it have been to bake cookies while we were dining on the deck and then serve them warm for dessert fresh out of the grill!

But I forgot to buy flour for the cookie dough so that idea will have to wait until next time!

I am still in awe of a grill that can cook in so many different ways!

  1. This grill does really look amazing! How is the maintenance? I’ve been told you have to remove all pellets after each cook with pellet grills so they don’t collect moisture. Is that easy to do with this grill?
