Mother’s Day Small Bites Outdoor Brunch Buffet
Mother’s Day Brunch Buffet has always been a tradition. Today, I am sharing some fun recipes for small bites and outdoor brunch buffets!
I have not been a brunch fan for the past few years because there is always too much food. These small bites provide just the right amount of food for everyone.
Mother’s Day Outdoor Brunch Buffet
I love Mother’s Day Brunch. My parents came over for years, and I cooked up a traditional outdoor brunch buffet (with all my boys’ help, of course!). This year, I put together a brunch buffet with a twist. I made everything in small bites!
As you can see, I made some very fun foods. All of them are fairly common breakfast items but are so festive when served as small bites. It is so easy to make all of your favorites in small portions. I think it’s great for everyone to help themselves and enjoy as much as they want to get just the right amount of food. I love that all the items are bite-sized and aren’t too filling.
They all taste amazing, and I can’t wait to share with you which is my favorite!

Bite-Sized Pancakes on a Skewer
Yogurt Berry Granola Cups
French Toast in a Shot Glass
Mini Avocado Toasts
Bite-Sized Blueberry Muffins
I put together a fun menu of bite-sized foods. I thought about adding an egg dish, but there seemed to be so much food already! It is pretty easy to take any of your recipes and make them smaller. Mini egg quiches and mini egg/cheese/sausage taquitos would be fun too!
Bite-Sized Pancakes on a Skewer
These are so easy to make. I made mini gluten-free pancakes and put them on a skewer with bananas and strawberries!
In the photos below, you can see that I used a melon baller to portion out the pancakes. Although they weren’t perfectly round, it didn’t matter—they still looked cute. Next, I cut bananas and strawberries and served them on skewers.
For the pancakes, I used the King Arthur Gluten-Free pancake mix. It’s really good and I love them. If you want a homemade pancake recipe, try my Orange Juice Pancake recipe.
Yogurt Berry Granola Cups
I make these Granola Parfaits all the time. You need to layer granola, yogurt, and fresh berries to make them. That’s it!
French Toast in a Shot Glass
The French Toast in a Shot Glass was my favorite. It was so good. But next time, I will melt a little butter and add it to the shot glass, too!
To make this French toast, slice thick bread into rectangles. Mix one egg and about three TBL milk and mix thoroughly. Dip the bread into the egg mixture and cook in a pan sprayed with cooking spray. Fill shot glasses with syrup and drop in the French toast.
Mini Avocado Toasts
I love Avocado Toast. You can top these with grated red onions, walnuts, and any cheese you want. I just used a wonderful seasoning of salt, pepper, and garlic. Yum!
These are so easy to make. Slice a baguette and grill it under the broiler. Mash two ripe avocados and spread them on the toasted bread. Top with any of the items listed above, or add your own!
Bite-Sized Blueberry Muffins
Blueberry muffins are my favorite, and these bite-sized ones are perfect especially because you can have two without the guilt! You can use my recipe but only make one-half of it.
Leslie's Easy Blueberry Muffins
Blueberries are my favorite and I love to make these muffins.
The recipe is so simple (it's only four steps) and these muffins are delicious.
Ingredients
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 1/2 cup flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 tsp. salt
- two large cartons of fresh blueberries
Instructions
- Preheat over to 400 and grease muffin tins.
- Using the two bowl method, mix the egg, milk, and oil in one bowl and the flour, sugar, baking powder, and salt in the other bowl.
- Combine both and add blueberries. Stir till lumpy.
- Bake 25 - 30 minutes when a wooden skewer comes out clean when inserted into the muffin.

Everything you do is just amazing! I love this idea of small bites! Does it not matter that everything will be cold -pancakes and French toast-no way to keep it warm I guess and keep small bites? Thank you for all your posts

I love all of these small bites! I’m wondering how far ahead of time the pancake skewers can be made. Thinking that the bananas would turn brown, unless you made them right before serving, or do you use something on them to prevent that?
