|

Some recipes just taste like summer. You know the kind—fresh, colorful, effortless, and bursting with flavor. One of my absolute favorites this season is this Grilled Peach Burrata Salad with Honey Balsamic Drizzle.

It’s everything I love in a summer dish: sweet peaches, creamy cheese, peppery greens, and a drizzle of sweet and tangy goodness. It’s elegant enough for entertaining, easy enough for lunch on the patio, and it always disappears quickly.

Today I’m sharing the full salad recipe, tips for grilling peaches perfectly, a few ways to customize the salad, and some simple entertaining ideas to help you turn this dish into a highlight of your summer table.

Why This Salad Works

A salad with arugula, sliced peaches, pecans, and mozzarella sits on a white plate, with extra arugula and peach slices scattered on a light wooden surface.

Grilled peaches are a revelation when they hit the grill, as their natural sugars caramelize, creating a warm, almost syrupy flavor. Pair them with creamy burrata and peppery arugula, and you have a combination that’s equal parts indulgent and refreshing.

The toasted pecans bring crunch, the greens balance the richness, and the honey balsamic drizzle ties everything together with a sweet-savory finish. It’s a dish that looks impressive but takes less than 20 minutes to pull together.

Ingredients

Various food items including hot honey, balsamic glaze, olive oil, pecans, peaches, burrata cheese, and arugula are arranged on a marble countertop in front of a window.

Here’s what you’ll need:

  • 3 ripe peaches, halved and pitted
  • Olive oil (for brushing)
  • 8 oz burrata cheese
  • 4 cups arugula or mixed baby greens
  • 1/2 cup toasted pecans or walnuts
  • 1/4 cup sugar
  • 1 tbsp hot honey
  • 2 tbsp balsamic glaze (or balsamic reduction)
  • Salt and freshly cracked pepper

Optional additions:

  • Fresh basil leaves
  • Thinly sliced prosciutto
  • Crusty bread or crostini on the side

How to Make It

Step 1: Prep and Grill the Peaches
Start by brushing your peach halves lightly with olive oil. This helps prevent sticking and gives them a nice sheen on the grill.

Preheat your grill (or grill pan) to medium heat. Place the peaches, cut side down, on the grates and grill for 2–3 minutes or until grill marks appear. Flip and grill the skin side for an additional 1 minute, then remove and let it cool slightly. Slice each half into wedges.

Step 2: Sugar the Pecans

Place the pecans in a frying pan and sprinkle the sugar on top. Cook over medium heat and stir the pecans until the sugar is melted. Please don’t leave them unattended, or they will burn! Once ready, sprinkle the pecans over aluminum foil to cool. Store them i a ziploc bag until needed.

Step 3: Build the Salad
On a large platter or individual plates, spread out the arugula. Tear the burrata into pieces and place it over the greens. Arrange the grilled peach slices and sprinkle the toasted pecans on top.

Step 3: Drizzle and Finish
In a small bowl, whisk together the honey and balsamic glaze. Drizzle it generously over the salad. Finish with a pinch of flaky sea salt and a few cracks of fresh black pepper.

That’s it! Serve immediately and watch it disappear.

Tips for Perfect Grilled Peaches

Six grilled peach halves arranged on a decorative white plate with a leaf pattern border.
  • Choose ripe but firm peaches. If they’re too soft, they may fall apart on the grill.
  • Brush with oil. This helps them caramelize and prevents sticking.
  • Use a grill pan if needed. No outdoor grill? A stovetop grill pan or cast iron skillet works beautifully.
  • Let them cool slightly before slicing. This helps them hold their shape in the salad.

Make It a Meal

This salad is a stunner on its own, but you can easily turn it into a full meal with a few additions:
