Whenever I am asked what my favorite dessert is, I always answer “mud pie,” which is made with homemade coffee ice cream. Yum.

Something about the Oreo cookie crust, coffee ice cream, hot fudge, and whipped cream gets me every time. You know I haven’t had a dessert in years, so when I tell you that my Homemade Coffee Ice Cream Mud Pie sundaes are good, they were tasted by two very tough critics … my husband and my youngest son.

Last week, I shared two mud pie recipes. They were easy to make as I used store-bought ice cream.

To make these Coffee Ice Cream Mud Pie sundaes, I made homemade coffee ice cream and whipped cream. I did cheat and use a delicious store-bought chocolate fudge topping, but you are welcome to make that, too. Just remember to send me your recipe!

What You Need to Make Homemade Coffee Ice Cream

Homemade ice cream is very easy to make. The recipe consists of egg yolks, milk, heavy cream, sugar, and vanilla. You can add quite a few wonderful flavors to the ice cream base.

To make homemade coffee ice cream, you should use whole coffee beans. If you use regular coffee, the water in the coffee will freeze, causing your ice cream to have a less-than-great texture.

The best way to flavor the cream with coffee beans is to simmer the whole beans in the milk. The stronger the beans and the longer you simmer the milk, the stronger the coffee flavor.

Homemade Ice Cream Machines

There are many different ways to freeze ice cream. One method is to pour the mixture into a plastic container and place it in the freezer.

There are many ice cream makers that require you to freeze the base of the unit in advance. They work very well. A few years ago, I decided to get a bit more serious in my ice cream-making efforts, and I purchased an electric, self-contained frozen dessert (ice cream) maker that does not require pre-freezing. It has its own cooling unit, so all you need to do is plug it into an outlet.

Homemade Coffee Ice Cream

This homemade coffee ice cream is so creamy and delicious, When layered with oreo cookie crust, hot fudge, and whipped cream, you can create mud pie sundaes.

Cook Time 45 minutes
Total Time 1 hour 30 minutes

Ingredients

  • 1 cup milk
  • 3/4 cup dark roasted coffee beans (decaf works too)
  • 3/4 cup sugar
  • 3 egg yolks (large)
  • 3 tsp flour
  • 2 cups heavy whipping cream
  • 1/2 tsp vanilla extract

Instructions

  1. In a saucepan, combine the coffee beans with the milk. Bring to a boil and immediately lower the heat and simmer for 30 minutes.
  2. Meanwhile, beat the sugar and egg yolks for about a minute. Beat in the flower.
  3. Remove the coffee beans with a strainer and pour the milk into the sugar and egg mixture.
  4. Pour the ice cream base back into a saucepan and heat until the mixture coats the back of a wooden spoon. Do not let the mixture boil.
  5. Remove from heat and pour through a strainer.
  6. Prepare the ice cream according to the ice cream maker's directions.
  7. To make mud pie sundaes, grind 20 oreo cookies and add 3 TBL melted butter. Layer the cookie crust, coffee ice cream, chocolate fudge sauce, and whipped cream. Repeat layer if necessary.

How to Make Coffee Ice Cream Mud Pie Sundaes

It’s easy to make mudpies. Of course, I wanted to do something different and make mudpie sundaes in aqua ball jars!

To begin, crush about twenty Oreo cookies in a bag with a meat pounder, blender, or food processor. Add 3 TBL melted butter and stir. 

Spoon about 1/2 cup of the cookie crust into each jar.

Add a generous scoop of homemade coffee ice cream and a generous helping of chocolate fudge sauce.

Make homemade whipped cream by mixing two cups of heavy cream with 1/4 cup sugar and 1/2 tsp vanilla. Mix in an electric mixer at high speed until stiff peaks are formed, about 5 – 7 minutes.

Making homemade whipped cream is easy, and it tastes much better than the cream you buy in the can. I promise!

Layer the jars with crust, coffee ice cream, chocolate fudge sauce, and whipped cream. Repeat the layer if necessary.

At first I thought no way , am I making coffee ice cream , but after I read your instructions on making it, and how much you loved the creaminess of it, I thought I’ve got to make the ice cream.   2. You might want to correct a recipe typo –should be #2 Stir in the flour.
    So when are you going to tell the story of NO DESSERT for 6 YEARS!?!?

  3. Looks amazing. I tried the recipe, but the amount of milk written doesn’t match the picture which shows 1 1/2 cups. It also doesn’t explain what to do with the first 2 cups of whipping cream. Assuming that goes in the ice cream or is it just for the topping? But great idea to heat the milk with the coffee beans!
