My Favorite Popsicle Recipes
Today I am sharing my favorite popsicle recipes. I love making Blueberry and Strawberry Lemonade popsicles. They are so delicious!
Popsicles are one of my most favorite things to make. I love that I can make my own recipes and use simple syrup or yogurt or just about anything I want to make popsicles.
Today I am sharing two fruit popsicle recipes for Blueberry Lemonade and Strawberry Lemonade. They are so refreshing.

Tools You Need to Make Popsicles
One of the most important things you need is a popsicle mold. I used to use a metal mold. (I bought it because it looks cool. Which was really dumb.) The problem with a metal mold is that it is really hard to get the popsicles out of the mold. So I switched to a silicone mold and it was so much easier!

How to Make Simple Syrup
You also need simple syrup. It is really easy to make. All you need to do is mix one cup of water with one cup of sugar and cook until it starts to boil. If you want to make flavored simple syrup, just add 1/2 cup of fruit or fresh juice (such as lemon juice or fresh blueberries). Let it cool and that’s it!

Mix the ingredients in a blender.
Fill the popsicle mold 1/4 the way up with fruit.
Add the lemonade mixture to fill the cups almost full. Just leave enough space to add some more fruit at the top.
Place the top on the popsicle mold, and place the sticks through the holes. Be sure to push them all of the way down.
After the popsicle is almost frozen, pull off the top of the mold, and add the remaining fruit (and lemonade mixture if necessary.)
To remove the popsicles, remove the top and gently press on the bottom of the mold. Push the popsicles party out and pull with sticks.

Blueberry and Strawberry Lemonade Popsicles
The fresh fruit popsicles are so refreshing and delicious!
Ingredients
- Simple Syrup:
- 1 cup sugar
- 1 cup water
- 1/4 cup lemon juice
- 1/4 cup fresh blueberries
- 2 1/2 cups ice
- 1 cup water
- 10 - 15 strawberries
- 25 -35 fresh blueberries
Instructions
Simple Syrup
- Place 1/2 cup water and 1/2 cup sugar in tow saucepans. Add 1/4 cup lemon juice to one pan and add 1/4 cup fresh blueberries to the other.
- Cook, while stirring until mixture boils. Remove from heat and let cool. Strain the blueberry simple syrup and discard the blueberries. (You can also put them in the popsicle if you want but they will be sweet.)
Popsicles
- Starting with the strawberry lemonade popsicle, mix 1 1/4 cups of ice, 1/2 cup of water and lemon simple syrup in a blender. Mix until blended.
- Repeat step #3 but using blueberry simple syrup.
- Add sliced strawberries to five popsicle molds. Add blueberries in the other molds.
- Add the simple syrup/ice mixture and fill up the popsicles almost all of the way to the top.
- Add the top of the mold and place sticks through the top. Freeze for approximately three hours.
- Once popsicles are almost frozen, remove the top and fill the popsicles with fruit and the remaining syrup mixture.
- Place lid on the mold and freeze at least another three hours.
- When ready, remove the top and gently push the popsicles out of the mold.
- Enjoy!
