St. Patrick’s Day is in like four days! So I decided to whip up some very delicious sandwich ideas and some Happy Hour drinks. Today I am sharing all of my St. Patrick’s day recipes.
I think I can lure a few of my boys home with this, don’t you think?
Plan a Fun St. Patrick’s Day
It doesn’t take much to have a fun St. Patrick’s Day. I remember my mom used to dye the milk green so when we would open the fridge to get the milk for our cereal, it would be green.
Now that I am all grown up, ha ha, I am planning a yummy menu and some fun cocktails for my husband and our grown sons.

I also made a green and an Irish cocktail. I made two St. Patrick’s Day Mules Recipes. (I also made these green polkadot glasses. They are so easy to make!)
These are so easy to make!
Irish Mule Recipe – Pour two ounces of Jameson over ice and fill the glass with Fever Tree Ginger Beer. Add a squeeze of lime.
Midori Mule Recipe – Pour two parts vodka and one part Midori over ice. Fill glass with Fever Tree Ginger Beer and garnish with a lime.
I can’t decide which one I like better. They are both so good!
I made the green and white cloth napkins pictured above. They are so much fun and easy to make.

Overnight Pressed Nine Layer Sandwich
Doesn’t this look amazing? It’s a pesto mayo, spinach, smoked turkey, white cheddar cheese, balsamic onion jam, yellow pepper, spinach, cucumber, pesto mayo sandwich.
That would be nine layers of goodness. All in one sandwich.
My favorite part of the sandwich is the Balsamic Onion Jam. I am obsessed with this and I intend to put it on about everything I make. It’s that good!
Here is a quick photo summary of how you make this sandwich.
- Overnight Pressed Nine Layer Sandwich
- 1 Sourdough round, hollowed out
- Pesto Mayonnaise (see recipe below)
- Onion Jam (see recipe below), cooled
- Spinach, stems removed (about one bag)
- ½ pound minimum, Sliced Turkey
- 6 slices minimum, White Cheddar Cheese
- ¼ Yellow Pepper, thinly sliced and cooked in olive oil until soft, cooled
- 1 Cucumber, sliced
- Pesto Mayonnaise
- ½ cup of mayonnaise (I used avocado oil-based mayonnaise)
- 2 TBL prepared or fresh-made pesto
- Balsamic Onion Jam
- 2 white onions diced
- ¼ up Olive Oil
- 2 TBL Balsamic Vinegar
- 2 TBL Sugar (I used coconut palm sugar)
Mix mayonnaise and pesto together until combined.
Balsamic Onion Jam
Place diced onions and olive oil in a pan on medium heat. Cook until onions start to become translucent and soft. Add balsamic vinegar and sugar. Reduce heat and cook until the mixture is dark and thickened (about 10 minutes). Remove from heat and refrigerate once cooled.
Overnight Pressed Nine Layer Sandwich
Make the onion jam and yellow peppers first so that they can cool before you add them to the bread round. To cook the yellow peppers, slice and cook in a frying pan with 1 TBL olive oil. Cook for three minutes until soft. If they are still hot/warm, they will melt the cheese and wilt the spinach.
Cut bread round in half and hollow out removing most of the interior. Be careful not to tear the outside of the bread. (You can use the interior of the bread round to make breadcrumbs later.)
Brush the insides of the bread round with the pesto mayo to coat. Save leftover pesto mayo for the Avocado Cucumber Rounds.
Layer spinach leaves onto the bottom of the bread round, on top of the pesto mayo.
Layer sliced turkey on top of the spinach leaves in the bottom of the bread round.
Layer cheese on top of the turkey in the bottom of the bread round.
Layer sliced yellow peppers on top of the cheese in the bottom of the bread round.
Layer onion jam on top of the yellow peppers in the bottom of the bread round.
Layer spinach leaves on top of onion jam.
The bottom of the bread round will be getting pretty full by this point. You decide how much of each item you want to include in the sandwich, more or less turkey. More or less cheese and spinach. Tons of onion jam, or just a layer, you get where I am going with this.
Layer the sliced cucumbers into the top of the bread round, pressing into the pesto mayo so they will stick.
Replace the top of the bread round onto the bottom of the bread round. Press firmly.
Wrap the bread round tightly in plastic wrap so completely sealed. Add a layer of foil on top of the plastic wrap. Place in the refrigerator overnight* with something heavy on top of it (canned tomatoes, etc.).
* Refrigerating the sandwich overnight with the weight on top of it helps the sandwich layers to stay together. In a pinch, you can leave it for a minimum of 15 minutes in the refrigerator, just slice it very carefully.
When ready to serve, unwrap the sandwich and slice in half with a bread knife, being careful to keep all layers intact. Cut each half in half again. Slice each quarter in half again until you have 8 wedges of sandwich (think pizza slices)!
Once you try the Balsamic Onion Jam, you will want to make a ginormous batch so that you can put it on literally, everything!
Avocado and Cucumber Rounds Baguettes
These small sandwiches are refreshing and what I call “easy bites”. They are easy to eat and pleasing to all. I mean, who doesn’t like avocado and cucumbers?
As you can see, these are really easy to make.
- Two avocados (mashed)
- Salt to taste
- One Cucumber (sliced thinly)
- ¼ yellow bell pepper (diced finely)
- Habanero Ranch Dressing (Tessemae’s) (dollop)
- Optional - leftover pesto mayo from Overnight Pressed Nine Layer Sandwich (dollop)
Slice baguette into ¼ inch rounds
Mash two avocados in a bowl, salt to taste.
Slice cucumber in as thin of slices as you can.
Dice yellow pepper into as small of pieces as you can.
Assembly: Place one spoonful of mashed avocado on a baguette round. Top with a cucumber slice. On top of the cucumber, place a small dollop of the leftover pesto mayo. Top the pesto mayo with a pinch of diced yellow pepper. Add a small dollop of Habanero Ranch dressing on top of the diced pepper.
Tessemae’s Habanero Ranch dressing is dairy-free, gluten-free, and organic. It has a kick to it, so use sparingly, but often.
