RECIPES // My “Throw Together a Dinner Party in a Few Hours” Recipe

I love to entertain. But I am not crazy about cooking dinner Monday through Friday because I get bored cooking the same “midweek dinners”. (And that usually always involves my bbq.) Part of the problem is when I ask Dave what he wants for dinner his answer is usually “Anything is fine”.

Since the meals at our house are WAY better when we entertain, Dave and I are often inviting people over for dinner at the last minute. My Butternut Squash Ravioli recipe is a great go-to option and you can find that recipe here on my blog. But my favorite “throw together a dinner party in a few hours” recipe is Grilled Salmon with Avocado Salsa. You can also cook it in the oven (instead of using your bbq) at 350 degrees for about 25 – 30 minutes and it tastes just as good. The recipe came from Tasty and I love that the video shows you exactly how easy this is to make.

I usually serve the salmon with rice, grilled asparagus and a salad with greens, dried cranberries, mandarin oranges, gorgonzola cheese and Paul Newman’s Lite Sesame Ginger Dressing.

  1. My go to midweek meal is tuna cakes more practical for two missionaries than crab! And definitely within our budget. Most things I make are from scratch. With the tuna cakes I add my homemade honey mustard dressing.
